Lemon Sponge Cake is a light, fluffy cake flavored with fresh lemon juice and zest, offering a zesty, refreshing taste perfect for any occasion.
- All-purpose flour - Eggs - Sugar - Lemon zest & juice - Baking powder - Butter (or oil) - A pinch of salt
In a bowl, beat eggs and sugar till pale and fluffy. Add lemon zest, juice, and melted butter. Mix well.
Sift in flour, baking powder, and salt. Gently fold the mixture—don’t overmix! This keeps the cake airy.
Pour the batter into a greased pan. Bake at 170°C (340°F) for 25-30 mins, or until golden and springy.
Once baked, let the cake cool completely on a wire rack. The aroma of lemon will fill your kitchen!
Mix powdered sugar and lemon juice for a quick glaze. Drizzle it over the cooled sponge for a tangy finish!
Slice it up and serve with tea or fresh berries. It’s soft, zesty, and absolutely delightful.
