1. Tricolor Phirni (Saffron, White, & Green)

Ingredients:
- 1/2 cup basmati rice (soaked & ground)
- 1-liter full-fat milk
- 1/2 cup sugar
- 1 tsp cardamom powder
- A pinch of saffron (for orange layer)
- 1 tbsp pistachio paste (for green layer)
Method:
- Boil milk, add rice paste, and stir continuously.
- Add sugar and cardamom, cook until thick.
- Divide into three parts.
- Mix saffron in one part (orange).
- Keep one part plain (white).
- Blend pistachio paste into the third (green).
- Layer in a glass dish and chill. Serve cold!
2. Jalebi with Rabdi
A crispy, syrupy jalebi paired with creamy rabdi is a match made in dessert heaven!
Ingredients (Jalebi):
- 1 cup maida (all-purpose flour)
- 1 tbsp cornflour
- 1/2 tsp baking soda
- 1 cup sugar
- 1/2 cup water (for syrup)
- Oil for frying
Ingredients (Rabdi):
- 1-liter milk
- 4 tbsp sugar
- 1/2 tsp cardamom powder
- Chopped nuts for garnish
Method:
- Mix maida, cornflour, baking soda, and water into a batter. Ferment for 8 hours.
- Heat sugar and water to make syrup.
- Pipe swirls of batter into hot oil, fry until golden, then dip in syrup.
- For rabdi, simmer milk until thick, add sugar and cardamom, and top with nuts.
- Serve jalebis warm with chilled rabdi.
3. Coconut Ladoo (Quick & Festive)
These coconut ladoos are simple, no-cook, and bursting with flavor—ideal for a last-minute sweet treat.
Ingredients:
- 2 cups desiccated coconut
- 1 cup condensed milk
- 1/2 tsp cardamom powder
- Chopped pistachios for garnish
Method:
- Mix coconut, condensed milk, and cardamom in a bowl.
- Shape into small balls and roll in extra coconut or pistachios.
- Refrigerate for 30 minutes before serving.
