Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ¾ cups milk or buttermilk for extra tang
  • cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • For the natural blue color: ¼ cup mashed blueberries about a handful OR a tiny drop of natural blue spirulina powder (optional, for a more vibrant color)

Method
 

Step 1: Mash and Marinate
  1. In a small bowl, take about a quarter cup of the blueberries and mash them well with a fork. Stir in the lemon juice and let it sit. The lemon juice will react with the blueberry pigments, creating a beautiful, deeper blue hue.

Step 2: Mix the Dry Team
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. This ensures there are no lumps and everything is evenly distributed for the perfect rise.

  1. In a separate bowl, beat the eggs lightly. Then, whisk in the milk, oil (or melted butter), and vanilla extract until it's a smooth, happy mixture.

Step 4: Create the Batter
  1. Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined. A few lumps are perfectly fine! Overmixing is the enemy of fluffy waffles. Now, fold in the mashed blueberry mixture and the remaining whole blueberries. The batter will turn a lovely, speckled blue-grey.

  1. Preheat your waffle iron according to its instructions. Once hot, lightly grease it with oil or non-stick spray. Pour enough batter to cover the center of the iron (about ¾ cup for a standard round waffle) and close the lid. Cook for 4-5 minutes, or until the steam significantly slows down and the waffle is golden brown and crisp.

  1. Carefully remove the waffle and let it sit on a wire rack for a minute to stay crisp. Serve immediately with a pat of butter and a generous drizzle of maple syrup.

Notes

A Tip for Crispy Waffles: For the crispiest results, place cooked waffles in a single layer on a wire rack in a low oven (about 200°F or 95°C) while you finish cooking the rest. This prevents them from getting soggy. Also, feel free to get creative with your toppings—a dollop of Greek yogurt, a sprinkle of lemon zest, or even a handful of other mixed berries would be delicious!
