Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter softened
  • 2 large eggs
  • ¾ cup sour cream
  • 1 tsp vanilla extract
For the Crumble Topping
  • ½ cup all-purpose flour
  • ¼ cup brown sugar packed
  • 1 tsp ground cinnamon
  • ¼ cup unsalted butter melted
  • ¼ cup chopped pecans or walnuts optional

Method
 

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.

  2. Mix Dry Ingredients: In a large bowl, whisk together 1 ½ cups flour, baking powder, baking soda, salt, and cinnamon. Set aside.

  3. Cream Butter and Sugar: In another bowl, beat the softened butter and granulated sugar with a hand mixer or stand mixer until light and fluffy, about 2 minutes. Add eggs one at a time, then mix in sour cream and vanilla extract until smooth.

  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix to keep the cake soft.

  5. Prepare Crumble Topping: In a small bowl, mix ½ cup flour, brown sugar, cinnamon, and melted butter until crumbly. Stir in nuts if using. Sprinkle evenly over the batter in the pan.

  6. Bake and Cool: Pour the batter into the prepared pan, smooth the top, and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a festive twist, add ½ cup of dried cranberries or chopped apples to the batter. You can also drizzle a simple glaze (1 cup powdered sugar + 1–2 tbsp milk) over the cooled cake for extra sweetness
