Ingredients
Method
- In a blender, combine the diced mango, milk, honey (or maple syrup), vanilla, and that tiny pinch of salt. Blend it until it’s completely smooth and looks like a bright orange smoothie.
- Pour this beautiful mango mixture into a medium bowl or a large jar with a lid. Now, sprinkle all the chia seeds over the top.
- Grab a whisk or a fork and give it a really good, vigorous stir for about a minute. This is the secret! It stops the chia seeds from clumping together.
- Let the mixture sit for 5 minutes. You’ll see it already start to thicken a little. Give it one more good stir to break up any clumps you might have missed.
- Cover your bowl or jar and pop it in the refrigerator. Let it chill for at least 4 hours, but honestly, leaving it overnight is perfect. The chia seeds will slowly absorb the liquid and turn into a wonderfully soft, pudding-like texture.
- The next morning (or after 4 hours), give it a stir. It’s ready! Spoon it into glasses or bowls, top with extra mango chunks and your favorite toppings, and dig in.
Notes
The chia seed to liquid ratio is key. This recipe uses a classic 1:4 ratio (¼ cup chia seeds to 1 cup liquid). If you prefer a thicker pudding, like for eating with a spoon, add an extra tablespoon of chia seeds. If you like it a bit looser, like for drinking as a smoothie bowl, use a tablespoon less. Feel free to play around and find your perfect consistency.
