Mango Chia Seed Pudding

Mango chia seed pudding is a creamy, no-cook breakfast or dessert made by soaking chia seeds in mango puree and milk until thick.

Ingredients
  

  • 1 cup Ripe Mango diced (about 1 large mango), plus extra for topping
  • 1 cup Milk of your choice coconut milk makes it extra creamy, almond milk is great too
  • ¼ cup Chia Seeds
  • 1-2 tablespoons Honey or Maple Syrup adjust to your sweetness liking
  • ½ teaspoon Vanilla Extract optional, but lovely
  • A pinch of Salt

Method
 

  1. In a blender, combine the diced mango, milk, honey (or maple syrup), vanilla, and that tiny pinch of salt. Blend it until it’s completely smooth and looks like a bright orange smoothie.

  2. Pour this beautiful mango mixture into a medium bowl or a large jar with a lid. Now, sprinkle all the chia seeds over the top.

  3. Grab a whisk or a fork and give it a really good, vigorous stir for about a minute. This is the secret! It stops the chia seeds from clumping together.

  4. Let the mixture sit for 5 minutes. You’ll see it already start to thicken a little. Give it one more good stir to break up any clumps you might have missed.

  5. Cover your bowl or jar and pop it in the refrigerator. Let it chill for at least 4 hours, but honestly, leaving it overnight is perfect. The chia seeds will slowly absorb the liquid and turn into a wonderfully soft, pudding-like texture.

  6. The next morning (or after 4 hours), give it a stir. It’s ready! Spoon it into glasses or bowls, top with extra mango chunks and your favorite toppings, and dig in.

Notes

The chia seed to liquid ratio is key. This recipe uses a classic 1:4 ratio (¼ cup chia seeds to 1 cup liquid). If you prefer a thicker pudding, like for eating with a spoon, add an extra tablespoon of chia seeds. If you like it a bit looser, like for drinking as a smoothie bowl, use a tablespoon less. Feel free to play around and find your perfect consistency.
