Oats Pudding

Ingredients
  

  • 1 cup Rolled Oats old-fashioned oats
  • 2 cups Milk of your choice dairy, almond, oat, or soy all work great
  • 1 Ripe Banana mashed (or 2 tbsp maple syrup/honey)
  • 1 tsp Vanilla Extract
  • A generous pinch of Cinnamon
  • A tiny pinch of Salt trust me, it makes a difference!
For Toppings
  • Fresh berries, sliced banana, a drizzle of nut butter, or a sprinkle of nuts and seeds.

Method
 

Step 1: Combine
  1. In a small saucepan, combine the rolled oats, milk, mashed banana (or your chosen sweetener), vanilla, cinnamon, and salt.

Step 2: Simmer
  1. Place the saucepan over medium-high heat and bring the mixture to a gentle simmer. Give it a good stir as it heats up.

Step 3: ️Reduce & Cook
  1. Once simmering, reduce the heat to low. Let it cook for about 5-7 minutes, stirring occasionally. You’ll know it’s ready when the oats have absorbed most of the liquid and the texture is thick and creamy.

Step 4: Taste
  1. Turn off the heat. Give it a taste and see if you’d like it a little sweeter. You can add a bit more sweetener here if needed.

Step 5: Rest
  1. For the best, creamiest texture, let the pudding sit in the pot for 5 minutes off the heat. This lets the oats fully plump up.

  1. Spoon your creamy oats pudding into bowls and pile on your favorite toppings. Enjoy it warm, or pop it in the fridge to enjoy cold later!

Notes

Don't be afraid to get creative with your mix-ins! Stir in a tablespoon of cocoa powder for a chocolate version, or add a handful of raisins or chopped apples at the beginning of cooking. This recipe is wonderfully forgiving, so make it your own. The goal is to enjoy it
