Raw Vegan Gingerbread Bites

No-bake, spiced Christmas treats made from dates, oats, and nuts. A healthy, festive bite full of cozy flavor.

Ingredients
  

  • 1 cup rolled oats certified gluten-free if needed
  • 1 cup soft Medjool dates pitted (about 10-12 dates)
  • 1/3 cup almond flour or raw walnuts
  • 1 tablespoon fresh ginger finely grated (or 1 tsp ginger powder)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • A tiny pinch of ground cloves
  • A pinch of sea salt
  • For Rolling: A tablespoon or two of desiccated coconut or extra almond flour.

Method
 

Step 1: Get Ready
  1. If your dates aren't super soft, soak them in warm water for 10 minutes, then drain well. This makes them easier to blend.

Step 2: Pulse the Base
  1. In a food processor, add the rolled oats and almond flour (or walnuts). Pulse a few times until they become a coarse, sandy texture.

Step 3: Spice It Up
  1. Add the soft dates, grated ginger, cinnamon, nutmeg, cloves, and salt to the food processor.

Step 4: Blend into Dough
  1. Process everything until the mixture starts to clump together and form a ball. If it's too dry, add a teaspoon of water or maple syrup. If it's too sticky, add a bit more oat flour.

Step 5: Shape the Bites
  1. Scoop out about a tablespoon of the dough. Roll it firmly between your palms to form a small ball. Roll each ball in the desiccated coconut or almond flour for a pretty, snow-dusted look.

Step 6: Put Bites into Fridge Before Serving
  1. Place all the bites on a small plate or baking sheet. Pop them in the fridge for at least 30 minutes to firm up. This makes them taste even better!

Notes

  • The flavor of these bites gets even deeper and more "gingerbread-like" after a day in the fridge.
  • Making them the night before is a fantastic trick for the best taste!
  • Feel free to get creative—roll them in cocoa powder, crushed nuts, or a drizzle of melted dark chocolate for a festive twist.
