Step 1: Get Ready
- If your dates aren't super soft, soak them in warm water for 10 minutes, then drain well. This makes them easier to blend.
Step 2: Pulse the Base
- In a food processor, add the rolled oats and almond flour (or walnuts). Pulse a few times until they become a coarse, sandy texture.
Step 3: Spice It Up
- Add the soft dates, grated ginger, cinnamon, nutmeg, cloves, and salt to the food processor.
Step 4: Blend into Dough
- Process everything until the mixture starts to clump together and form a ball. If it's too dry, add a teaspoon of water or maple syrup. If it's too sticky, add a bit more oat flour.
Step 5: Shape the Bites
- Scoop out about a tablespoon of the dough. Roll it firmly between your palms to form a small ball. Roll each ball in the desiccated coconut or almond flour for a pretty, snow-dusted look.
Step 6: Put Bites into Fridge Before Serving
- Place all the bites on a small plate or baking sheet. Pop them in the fridge for at least 30 minutes to firm up. This makes them taste even better!
