Step 1: Preheat and Prep
- First, turn your oven on to 350°F (175°C) to let it heat up. Then, take a 9-inch round cake pan and grease it with butter or oil, and sprinkle a little flour in it to keep the cake from sticking.
Step 2: Make the Cake Batter
- In a large bowl, beat eggs and sugar until pale and fluffy (about 3-4 minutes). Add melted butter and vanilla, mixing gently. Sift in flour, baking powder, and salt, then fold until just Mixed Properly.
Step 3: Bake the Cake
- Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely (about 1 hour).
Step 4: Prepare the Coffee Soak
- Mix cooled coffee, coffee liqueur (if using), and sugar in a small bowl. Set aside.
Step 5: Make the Mascarpone Cream
- In a chilled bowl, whip heavy cream until soft peaks form. Now In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla together until they're creamy with no lumps. Then, add the whipped cream and stir it in gently until it's all combined.
Step 6: Assemble the Cake
- Once the cake is cool, carefully cut it in half to make two layers. Put the bottom piece on your plate and use a brush to cover it with half of the coffee mixture. Spread half the mascarpone cream over it. Now, place the top cake layer on. Use the leftover coffee to drizzle over it, and then frost the entire cake with the rest of the cream mixture.
Step 7: Chill and Dust
- Refrigerate the cake for at least 1 hour to set. Before serving, dust the top with cocoa powder and powdered sugar (if desired).
Step 8: Serve
- Slice and enjoy your homemade tiramisu cake!
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- If you don't have mascarpone, use cream cheese instead. Just mix it with a little heavy cream to make it softer.
- Dust the cocoa powder just before serving to keep it looking fresh.
