Ingredients

  • 1 large egg
  • 1 large egg white
  • ½ cup 100g white sugar
  • cup 75g melted butter, cooled slightly
  • 2 tablespoons milk or plant-based milk
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • cup 83g all-purpose flour
  • A little extra butter or oil for greasing

Method

Step 1: Whisk the Wet Ingredients
  1. In a medium bowl, vigorously whisk the whole egg, egg white, and sugar until it’s a bit frothy and well combined. No need for a fancy mixer—your elbow grease is perfect!

Step 2: Bring in the Flavor
  1. Whisk in the melted (but not hot) butter, milk, vanilla extract, and that pinch of salt. You should have a smooth, thin, fragrant batter.

Step 3: Fold in the Flour
  1. Gently sprinkle the flour into the wet ingredients and stir until you can’t see any more dry streaks. Don't overmix; a few tiny lumps are okay. Let the batter rest for 5 minutes while your waffle cone maker heats up.

Step 4: Cook to Perfectly Golden
  1. Preheat your waffle cone maker according to its instructions. Once hot, lightly grease the plates. Spoon about 2 tablespoons of batter onto the center, close the lid, and cook for about 2-3 minutes, until it’s a beautiful golden brown.

Step 5: Shape the Cone
  1. Shape Immediately! This is the fun, fast-paced part! Carefully remove the hot waffle with a spatula. Working quickly (but carefully, it's hot!), place it on a clean surface, place your cone roller on one edge, and roll it up tightly. Pinch the pointy end to seal it.

Step 6: Let Them Crisp Up
  1. Place the rolled cone seam-side down on a wire rack. It will firm up in just a minute or two. If it unrolls a bit, just re-roll it quickly before it fully sets.

Notes

Get Creative! Before rolling, you can sprinkle the hot waffle with mini chocolate chips, a dusting of cinnamon sugar, or even a few chopped nuts. They will stick to the warm surface and create a custom treat. And if a cone breaks while rolling? Don't despair! You've just made a "waffle bowl" or delicious ice cream topping!
