Watermelon Cake

A watermelon cake is a healthy, no-bake dessert where a carved watermelon is "frosted" with yogurt and decorated with fruit and nuts to resemble a real cake.

Ingredients
  

  • 1 large seedless watermelon
  • 2 cups thick Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/4 cup sliced almonds or pistachios
  • 1/4 cup shredded coconut optional
  • Fresh mint leaves for garnish

Method
 

Step 1: Prepare the Watermelon Base
  1. Slice a thin piece off the top and bottom of the watermelon so it sits flat. Stand it upright and carefully slice off the rind, working from top to bottom, to form a round cake-like cylinder.

Step 2: Dry the Surface
  1. Use a paper towel to pat the entire watermelon "cake" until it's dry. This step is crucial for helping the yogurt frosting stick instead of sliding off.

Step 3: Make the Yogurt Frosting
  1. In a medium bowl, stir the Greek yogurt, honey, and vanilla together until everything is smooth and creamy. This is your healthy, protein-packed frosting.

Step 4: Frost the Cake
  1. Use a spatula or knife to generously cover the entire outside of the watermelon cylinder with the yogurt mixture. Create a smooth or slightly textured finish.

  1. This is the fun part! Gently press your berries, nuts, and coconut onto the sides and top of the frosted watermelon cake. Get creative and make a beautiful pattern.

  1. Carefully transfer your creation to a serving plate or baking sheet. Refrigerate for at least one hour. This Helps the frosting to set and makes the cake easier to Cut in Slices.

Notes

  • For the best results, choose a watermelon that is firm and symmetrical. If your watermelon has seeds, you can gently pick them out after shaping the base.
