This jaggery cake brings that same comfort into a soft, spongy bake. There’s no white sugar in it at all. The jaggery gives it a deep golden-brown colour and a rich, toffee-like flavour, and a little cardamom and ginger make it feel festive.

  • A pinch of salt

  • 1 tbsp raisins (optional)

First, deal with the jaggery

Jaggery doesn’t dissolve like sugar, so this step matters.

  1. Add the jaggery powder to the warm milk.
  2. Stir for 3 to 4 minutes until it melts completely. If there are stubborn lumps, warm it gently on low heat, but don’t let it boil.
  3. Let it cool for 5 minutes. If it’s too hot, it will cook the eggs.

If you’re using a hard block of jaggery, grate or chop it finely first.

How to make it

  1. Get ready. Preheat the oven to 175°C. Grease a 7-inch tin and line it with parchment paper.
  2. Mix the wet ingredients. To the jaggery milk, add the oil, eggs and vanilla. Whisk well until smooth and slightly frothy.
  3. Add the dry ingredients. Sift in the flour, baking powder, baking soda, cardamom, ginger and salt. Fold gently until just combined. The batter will be thin, and that’s normal.
  4. Pour and top. Pour the batter into the tin, tap it on the counter to remove air bubbles, and scatter the nuts and raisins on top.
  5. Bake. Bake for 35 to 40 minutes, until a toothpick comes out clean. Start checking at 30 minutes.
  6. Cool. Rest the cake in the tin for 10 minutes, then lift it out and cool on a rack. Let it cool fully before cutting.

Tips for a perfect jaggery cake

  • Use soft, fresh jaggery. Old, hard jaggery can be gritty. Powdered jaggery from a trusted brand melts the easiest.
  • Strain if needed. Jaggery sometimes has tiny impurities. If yours looks dirty, strain the melted jaggery milk through a sieve.
  • Don’t add hot jaggery milk. Always cool it a little first, or the eggs may scramble.
  • Don’t over-mix. Whole wheat flour turns dense if mixed too much.
  • Let the cake rest. It tastes even better the next day, when the flavours settle in.
  • Check the colour. Jaggery makes the cake brown quickly. If the top darkens too fast, cover loosely with foil for the last 10 minutes.

  • Coconut twist: Add ¼ cup desiccated coconut to the batter.
  • Festive spice: Add a pinch of nutmeg or a few saffron strands soaked in the milk.
  • Date and jaggery cake: Add 5 to 6 chopped soft dates for extra chewiness.
  • Vegan version: Use coconut oil, almond milk and replace the eggs with ½ cup applesauce or mashed banana.

No oven? Use a kadhai

Heat a heavy-bottomed kadhai on low for 10 minutes with a stand inside and the lid on. Place the tin inside, cover, and bake on low heat for 40 to 45 minutes. Avoid opening the lid before 30 minutes. Because of the jaggery, check the bottom of the cake so it doesn’t brown too much.

How to serve it

Serve thick slices with a cup of hot chai or filter coffee. For a dessert, warm a slice for 10 seconds and top with a spoon of ghee or a small scoop of vanilla ice cream. It also looks pretty on a festive plate with a few marigold petals and a diya beside it.
